One of the oldest and most significant agro-based industries in the world, the sugar business is going through a major transition due to changing customer expectations, sustainability concerns, and technical advancements. For many years, the production of sugar was marked by gradual advancements and a strong reliance on manpower. Climate change, market price fluctuations, and dietary shifts towards low-sugar alternatives have put the industry under increased scrutiny today. In order to assess the major innovation domains altering the sugar value chain, this review synthesises international literature, industry reports, and case-based evidence. Precision farming, mill automation, biotechnology, diversification of bio-based products, sustainability-focused solutions, and new digital business models are some of these developments. The results show a trend towards circular production systems, growing interest in health-conscious sugar alternatives, and growing incorporation of digital technology. However, obstacles like financial limitations, a lack of skilled workers, and unclear policies prevent widespread implementation. The review’s conclusion identifies potential avenues for future innovation acceleration, especially through cross-national cooperation and smallholder inclusion.
